Campfire Cherry Crisp

June brings warmer nights and the opportunity to gather with friends and family around the fire. Why not add a delicious dessert to share along with plenty of laughs? As spring turns to summer, cherries are the ideal fruit. This recipe embraces their sweet-meets-tart flavor and juicy texture, paired with a simple brown sugar crisp topping.

Build your fire, place the hub and griddle on top, and get cooking! You’ll have a fireside dessert ready to serve in no time. Just don’t forget the ideal pairing to top it all off — a scoop of your favorite ice cream. 

Campfire Cherry Crisp

Serves 4-6

Equipment
Bonfire 2.0, Cast Iron Griddle Top + Hub, cast iron skillet

2 (around 410 g) cans of dark cherries

1 ¼ cups (156 g) flour

1 cup (200g) brown sugar

1 teaspoon cinnamon

½ teaspoon salt

¾ cup (67.4 g) oats

1 stick (113.4 g or 8 tbsp) unsalted butter, melted

Step 1: Build a Fire

Build a fire in your Solo Stove Bonfire. Burn 4-6 logs and allow them to reduce to hot coals. Set up the cooking hub with the griddle on top.

Step 2: Add the Cherries

Dump both cans of cherries in a cast iron skillet with walls.

Step 3: Make the Topping

Whisk together the flour, brown sugar, cinnamon, salt, and oats in a small bowl. Pour the melted butter into the dry mixture and combine with a fork until clumps form.

Step 4: Sprinkle and Bake

Sprinkle the crisp topping all over the cherries. Cover with tin foil and place on top of the Solo Stove griddle. Bake the crisp for 10 minutes with the tin foil on. Remove the foil and allow the crisp to finish baking for 15 minutes.
